McCulley Cinnamon Rolls

      All right, ya'll.  It seems time for another recipe, and since I went all healthy on that last round, this time we will move in the opposite direction.  Cinnamon Rolls - My Dad's recipe.  He loved making these for our family, and I am so thankful to have the recipe that he spent time perfecting.  Here it is.

You will need, for the rolls:  (no pic this time)
1 Cup Warm Milk
2 Eggs, beaten  - mix the eggs in with the milk
4 TBSP melted butter
3 cups of Bread flour
1 tsp salt
2/3 cup whole wheat flour
4 TBSP sugar
1/3 cup non-fat Dry Milk
2 tsp Yeast

For Filling:                                       For Frosting/Glaze:
1 stick of butter                                1 TBSP Soft butter
1/2 cup of brown sugar                    1 cup powdered sugar
2 TBSP cinnamon                            Milk - mixing to desired consistency
                                                         1/2 tsp vanilla

The beautiful thing about this recipe is that the dough is made in the bread machine while you sleep.  I think you could make it without a bread machine, but I have always done it with, so I don't know how to do that.  Add your liquids to the bread machine first.


Then, add all of the dry ingredients, saving the yeast for last.  Add your salt in with the flours, and keep the yeast and the salt separated, so that your yeast doesn't eat your salt.  Yeast is such a strange thing.


Set your bread machine on the dough cycle, and delay the time, so that it will be ready when you are ready to mess with it again in the morning.  For me, that was 9 hours later.


In the morning, I went out to find this!


I punched it down, and put in on the counter for a brief kneading.


Roll out your dough on a floured surface to about a 1/2 inch thickness into a rectangle of 15 inches by 12 inches - approximately.


Soften a stick of butter and spread onto the dough.  When I first made these, I figured melting the butter all the way would be fine.  This created a cinnamon/sugar/butter disaster that ended up dripping all over the counter.  So I have learned - soften the butter just a bit, and then spread it onto the dough.


Make the filling of brown sugar and cinnamon and sprinkle it onto the dough and let it sit for 2-3 minutes.


Roll that puppy up long ways and seal the edges by pinching them together.


Using floss, or thread, cut your roll into rolls.  This is probably my favorite part.


Lay onto a lightly greased pan or a stone pan, if you have one.


Let them rise, covered, until they are as big as you want them - mine took about 15 minutes to reach this size in a slightly warmed oven.


Bake at 350° for 15-20 minutes or until golden.  Try to wait patiently.


Brush with melted butter - however much you want.  I did a whole stick, but that was probably overkill.


Mix up your frosting - I double the frosting recipe.  This time around, I added too much milk, so it was more glaze than frosting - but still quite tasty.


Lastly, as Dad wrote on the recipe card, "Eat with Gusto."  We did.
